February gloom, February doom. Everyone I know hates February. It’s an unnecessary month, cruel, teasing us with 65 degree days of sun and cardigans, followed by 34 degree days of misery. When February gloom sets in, make Orangette‘s Braised Winter Greens with Chickpeas, Onions, and Garlic to lift your spirits.
This is a comfort food- my favorite type- but also happily healthy: it’s got greens and beans. Yum. It uses great quantities of onions and garlic, which, when cooked, suffuse the kitchen with such cheerful smells that you can’t help but feel better…and hungry. Pop in the buttery chickpeas, then add the rough kale, stirring it to softness, and let it cook for a while. Squeeze the lemon juice- don’t forget the lemon, it awakens the dish and your taste buds and it’s key to transforming these greens from plainly comforting to wildly wonderful. Juicy and flavorful, it’s a perfect cure for February’s flatness, and if you make a large quantity on Sunday, you can have some Monday and Tuesday!
